# Method Steps:
01 - In a large bowl, blend mashed potatoes, chopped ham, diced onion, parsley if using, egg, flour, salt, and pepper until a thick mixture forms.
02 - With floured hands, shape the mixture into eight patties approximately 2.5 inches in diameter and 1/2 inch thick, then lightly dust each with flour.
03 - Heat vegetable oil or unsalted butter in a large skillet over medium heat.
04 - Fry patties in batches for 3 to 4 minutes per side until they develop a golden brown, crisp exterior; avoid overcrowding the pan.
05 - Place cooked patties on a paper towel–lined plate to absorb excess oil and serve warm.
